Can anyone give me the best recipe for jerk chicken?

Trust me on this one - When I can't get authentic jerk from the islands, I use this seasoning and it tastes almost perfect! If you are near a Whole Foods grocery store, purchase the ';Busha Brown'; Jerk Seasoning/Marinade. Usually one jar per 2 pounds of chicken. Clean the chicken thoroughly, pour the jar of marinade on the chicken, drizzle with 1/3 cup of olive oil, and squeeze 1/2 lemon. Mix thorougly and let stand in the refrigerator for at least an hour, overnight is best! After marinating, grill chicken or cook in the oven on broil. You will have the best jerk chicken, may a suggest a side of saffron rice! It tastes homemade/authentic and has the right amount of seasoning and spice!
