One of the easiest things to do with with a chicken breast is this:
Preheat oven for 15 minutes at 350 degrees
Lightly season the breast with salt, pepper and garlic powder (if you have it)
Line a small baking pan with aluminum foil and spray it with non-stick spray.
Place the seasoned breast in the pan, top with thinly sliced onion and two or three slices of bacon (depends on the size of the breast)
Cover loosely with aluminum foil.
Bake approximately 45 minutes. (this will depend on the altitude of where you live. Check at 45 minutes if juice is running clear, remove foil and top with your favorite cheese. My favorite is cheddar, but use what ever you have on hand....any kind. When cheese is melted, remove from oven and enjoy!
My whole family loves this and you can tweak it to suit yourself...maybe add a little BBQ sauce or mushrooms or peppers. Just whatever you like or have on hand.
I am a really lazy cook....hence lining the pan with foil and using the non stick spray....after you have removed the chicken breast..just wad up the foil and trow it in the trash...no messy pan to clean...yea!!!
Broccoli Rice and Chicken
2 pounds chicken tenders or boneless chicken breasts cut in strips
1 1/4 cups uncooked converted rice
1 package Knorr's Cream of Broccoli Soup Mix
1 1/2 cups chicken broth
pepper, to taste
Place rice in a lightly greased slow cooker/Crock Pot. Sprinkle with parsley and pepper. Top with chicken pieces. Mix together the soup mix and broth. Pour over chicken and rice. Cover and cook on low for 6 to 8 hours

QUICK FETUCINI CACCIATORE:
8 oz. fettuccine, uncooked
4 tsp. vegetable oil
1 lb. boneless skinless chicken breasts, chopped
1 cup each: sliced green peppers and sliced mushrooms
1 can (14-1/2 oz.) diced tomatoes, undrained
1/4 cup KRAFT Zesty Italian Dressing
1 cup KRAFT Shredded Italian Mozzarella/Parmesan Cheese Blend
1/2 cup chopped fresh basil leaves
COOK pasta as directed on package.
MEANWHILE, heat oil in large skillet on medium-high heat. Add chicken; cook and stir until no longer pink. Add peppers and mushrooms; cook 3 min., stirring occasionally. Stir in tomatoes with their liquid and the dressing. Reduce heat to medium-low; simmer 5 min. or until chicken is cooked through. TOSS pasta with the chicken mixture; sprinkle with cheese and basil.
Can add ripe olives along with the tomatoes.
Have fun.

Or if you are really time pressured--
Brown a few boneless chicken breasts w/ onions %26amp; peppers in a large frying pan. When done, pour in 1 or 2 cans of Cream of Chicken soup until gravy-like. Bake a few biscuits in the oven. When done, cover biscuits with gravy.
Smothered chicken %26amp; biscuits. So easy!!!
Here is my easy recipe - I make this several times per week:
Preheat oven to 375. Line a baking dish with foil. Take 1 bone-in, skin-on chicken breast and wash it with cold water, dry with paper towel. Place chicken skin-side down in pan. Coat with extra-virgin olive oil, then sprinkle liberally with garlic salt and pepper. Turn over and oil the skin side, then sprinkle that liberally with garlic salt %26amp; pepper and add some dried parsley (or other dried herbs you enjoy). Cover with foil.
Bake covered for 40 to 45 minutes. Uncover and bake another 10 to 15 minutes until skin is golden brown.
I usually serve this with garlic mashed potatoes or rice. Goes great with bbq sauce too but it is excellent just on its own.
Heat a nonstick pan so it's ready to cook when you are. If you have an electric stove, put it on medium or slightly lower, but when you're ready to cook, turn it to halfway between medium and low ...
Get some regular or Italianistyle breadcrumbs and some salt handy (I prefer Italian, but go with whatever you like best) ...
If your chicken breast is very thick, pound it first so it cooks quicker and more evenly. If it's average sized, don't worry about flattening it first.
Pour a little olive oil (like, 1/2 tsp., or however much it takes to rub it over the meat with your fingers or a brush) on the chicken breast, so that the breadcrumbs will stick to it. Then a little salt ... however much you like.
Next, run the chicken thru the breadcrumbs, but kind of press the breadcrumbs into the chicken so it gets a nice coating.
After the chicken is all breaded and ready to go, put a nice amount of olive oil in the hot non-stick pan. I'm thinking enuf to coat the bottom of the pan, and then a little more. Once the oil is hot enough to sizzle a small amount of breadcrumbs, put the chicken in. It should sizzle, too, but not spatter. You don't want the pan too hot, so turn it down from medium to medium/low once you put the chicken in the oil. The chicken should be nicely browned on one side after about 6-7 min. Once it gets nice and browned, flip it and cook the other side til it's nice and brown - should be about 10 - 14 min both sides. I love this because the chicken gets a nice crispy coating, but olive oil is SOOO good for you !

Yes I know quite a few. These are all for stove top unless noted, keeping mind you pick the amounts of the item added unless noted,
Add a jar of apricot preserves or jam
Add a jar of salsa
Add bell pepper and onion, cook these three right before your done add half a pkg of cream cheese
Add can of cream of chicken soup and cook, when done place on top of stove stop stuffing, rice, or noodles.
Cook the chicken and when it is almost done add pesto, from the cold section or home made. A little goes a long way, add to taste.
Cook with a can of pineapple and its juice, adding gp and onion if you want.
Cook with apple slices and apple juice and cinnamon.
Cook then add one can sliced new potatoes, thinly sliced onion and some garlic. Careful not to caramelize the garlic.
These are all basic ideas, I use salt and pepper or Lawry's garlic salt and pepper in all of these recipes. I do not care for most veggies, so feel free to add any you like. All these can serve over anything you want.
I hope you find something here. For me one chicken breast, I add one third of a bell pepper and one quarter of an onion, I dont eat them, I use them for seasoning so add the quanity you like.
get some buffalo style franks hotsauce. marinade the chicken in a mixture of the hotsauce with some garlic and onion in a baggie for around 24 hours. cook in a non stick skillet with butter, basing with the hotsauce and chille powder. its super good if you like spicy food. also make sure to cook on pretty high heat for a short period of time but so that chicken is cooked all the way through and after cooking let set for about 5-20 minutes so its juicy and tender.
Flatten the chicken breast with a meat mallet or other heavy object such as a pan.
Dip the breast in milk, mayo or beaten egg.
Dip in seasoned flour or seasoned bread crumbs.
Fry in melted butter and oil until golden and cooked through.
OR
Broil and serve with barbecue sauce.
You can saute them all together like a fajita mix, or what I do alot, cut up the chicken into bite size pieces, add 1 c rice, and 1 can of ceram of mushroom soup and then a can full of water or milk, stir up in a baking pan and cook on 350 for 45 minutes or so
Got mayo and italian dressing? Marinate the chicken in a mixture of the two for at least 3 hrs. Put it in a baking dish, top with sliced onions. and tomatoes if you have any, and bread crumbs and bake for about 25 minutes at 375.
Put wiscushire sause as a maninate, add tonys seasoning, and parsey flakes.
Grill on the stove.

you can't think of something yourself ??? there is nothing to cooking but using what you have and like in the kitchen...so get a grip and use your head.
