To a bowl add:
chopped cooked chicken
green onion
celery
salt %26amp; pepper
mayo

Mix chicken with enough mayonnaise to completely moisten, generously, otherwise it will be dry. To that add sliced celery, about 2-3 stalks, about 1 slice of raw onion very finely diced, salt and pepper. This would be a recipe for enough for 4 sandwiches. Adjust ingredients accordingly, especially the onion -- you just want a very small amount.
3 cups cooked chicken- chunked big
1/2 cup celery
1/3 cup mayo
2 TB red onion
1 TB lemon juice
1 TB dijon
dash of salt and pepper
Put in kitchen aid mixer and let it rip- makes great texture
The great thing about this recipe is you can add any fruit, nut, veg and seasoning (my favorite is curry) to change it up.
leftover chicken, about 1-2 cups
a little mayo, just enough to moisten the chicken
2 stems chopped green onions, or 1/2 small onion, chopped
1 stalk celery, chopped
1 small apple, preferably granny smith, chopped

the apple gives it a different taste, kinda sweet and crunchy. i like mine on lightly toasted wheat bread or leftover dinner rolls
You get a couple of cold pieces of KFC -whichever kind you like best, pull the meat off the bone and remove any gristle etc.and then you chop it up and add mayonnaise. Taste it (it'll already have a bunch of the Colonels spices) and add salt and pepper if you want. You can also add chopped celery, some mashed up hard boiled egg, a little mustard or hot sauce -go crazy with it if you want. Me- I like it simple and slapped on two pieces of toast. Enjoy!
but chicken in a bowl, add half a chopped red pepper,sum cleaned lettuce, some onion(how ever much you want) some potato salad, and some small carrot sticks...then add mayo/salad cream/relish/watever takes ur fancy at the moment! mix it up and put it in a sandwich/roll and season with salt and/or pepper!.... mmmmm!!! enjoy!

Enough chicken salad to make 4 sandwiches
1 can cream of chicken soup
1/2 c. sour cream
Parmesan cheese
Place 4 chicken salad sandwiches in 8x8 inch pan. Mix 1 can cream of chicken soup with 1/2 cup sour cream. Spread over sandwiches. Sprinkle with Parmesan cheese. Bake at 350 degrees for 20-25 minutes.
If you are in a hurry you can get the canned shredded chicken breast, drain it, add mayo, boiled eggs, celery and salt and pepper. If you are not you can cook some white pieces of chicken and shred or chop. Either way it turns out.....

I like to use the smokey mountain bourbon chicken from Ingle's deli, chop chicken, add onion, mrs. dash, mayo, salt and pepper, that's it. everyone loves it.
