6-8 pieces of boneless, skinless chicken breasts ( you can substitute whatever pieces of chicken you like, you will have to bake a bit longer for bone-in pieces)
1 can cream of celery soup
1 can cream of chicken soup
1 can cream of mushroom soup
2 cans milk
3 cups instant rice
salt, pepper, poultry seasoning, garlic powder, onion powder to taste
Mix soup, milk, and rice in mixing bowl. Pour into greased 13 x 9 baking dish. Place chicken pieces on top, Cover with foil. Bake at 350 degrees for 1 hr. Uncover for last 15-20 min, brush chicken piece with a bit of melted butter or margarine, to brown chicken.Do you have a good recipe for chicken and rice?
Low Country Chicken Pilau
Ingredients:
* 1 tablespoons olive oil
* 1 cup chopped onion
* 1/2 cup diced ham or bacon
* 1/2 green bell pepper, coarsely chopped
* 1 rib celery, diced
* 2 cups long-grain rice
* 1/2 teaspoon salt, or to taste
* 1/4 teaspoon freshly ground pepper, or to taste
* 2 cups chicken broth
* 1 can whole tomatoes (or 1 cup fresh, peeled and chopped)
* 2 cups cooked cubed chicken
* salt and pepper, to taste
* 2 tablespoons minced parsley
Directions:
In a large deep skillet or Dutch oven, heat the olive oil; add the ham or bacon. Saut茅 until meat is lightly browned. Add the chopped onion, green pepper, and celery. Saut茅 until the onion is tender. Add the rice and saut茅, stirring, until lightly browned. Add the 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Add the 2 cups chicken broth and tomatoes to the skillet. Cover and simmer 25 minutes, or until the rice is tender and liquid absorbed. Stir the cooked chicken into the rice; heat through, about 2 to 3 minutes. Taste and add salt and pepper, if needed. Turn onto a platter; sprinkle with minced parsley, if desired.
Serves 6.
I like to make chicken chili and then serve it over rice. It is very good and yummy. If I have any leftovers I freeze the chili. This site has several chicken chili recipes. I have made them all and my family loves them.

3lbs chicken breast cut into cubes
1cup of rice or more if you like
3TBS salt
1TBS pepper
1TBS cumin powder
2 garlic cloves chopped grated
half cup onion
half cup bell pepper
1 cup tomatoes any kind you like
half a cup of cilantro if available
4 cups of water
directions
in a pan heat up 1 cup of oil brown chicken when yu can no longer see pink stir in rice until you see it a light golden color Stir everything else in it and Stir it all add water when it starts boiling get some of the water in a spoon and taste it if you think it need more salt add Mao little more until desired taste after water is gone cover and let stand for a while so steam can continue cooking rice if you see rice needs more cooking time add a little more water and let it cook a little longer ENJOY !
I brown some chicken pieces in a big pan on the stove
Add onions %26amp; garlic - carrots %26amp; celery
I then cook them with a bit of water for 45 inutes
Then add one 14 oz can of chopped tomatoes
1 bay leaf
And cook for 15 minutes until just about all liquid is gone
I then add 2 cups of rice
4 cups of water

stir and cook covered for 30 minutes with lid on.
After that, turn heat off and leave on stove for 15 minutes
