This recipe is for low fat chicken curry, but you could just replace some of the chicken by adding your favourite cooked veg to it.
Ingredients
* 1 tbsp Oil
* 10g Butter
* 3 Cloves Garlic, crushed
* 1 Medium Onion, finely chopped
* 2 tbsp Garam Masala
* 1 tsp Ground Coriander
* 陆 tsp dried mint
* 570g Boneless, Skinless Chicken Breast, diced
* 200 ml water
Method
1. Heat the oil and butter in a wok or large, heavy frying pan. Add the garlic and onion and stir fry for about 5 minutes until onion is golden.
2. Stir in the garam masala, coriander and mint. Add the chicken and cook over a moderate heat for 5 minutes, stirring occasionally.
3. Add the water, stir, and simmer without a lid for 10-15 minutes until the chicken is cooked and sauce has thickened.
If you like fresh coriander, stir in a tablespoon, chopped, prior to serving.Any recipes for a slimming chicken and veg curry?

Chicken breasts diced, curry powder, onion, garlic, potato, tin chopped tomatoes, crushed chillis (if you want).
Chop onion coarsly; fry in oil, add garlic, and then add chicken - fry until cooked. Add curry powder, fry for two minutes, add tomatoes. simmer for ten. serve with naan or rice.

eg Madras Tikka Masala Korma to suit most tastes
Method
Fry off onions in Sunflower Oil until golden brown, then add Garlic and chosen paste,. continue to fry off for another 2 mins MAXIMUM then add Lamb, Beef Pork or whatever and plenty of diluted stock and cook SLOWLY until tender
If u r using Chicken thighs as opposed 2 breasts place under a medium grill 2 remove most of the unhealthy skin fat then add 2
sauce mix in pot.
If u r using Chix breasts, cook for a MAXIMUM of 15mins at the end
of cooking
At the intermediate level of cooking, u can add ur favourite Veg
Lentils/Beans/Chick peas or whatever takes ur fancy.
I like it with Chestnut Mushrooms and Tomatoes especially
If u r having the curry with rice/pasta - yeah pasta/polenta/or cous cous add the appropiate stock cube to the boiling water at the start
of cooking ie Chix for Chix, Beef for beef e with a miniscule amount of Saffron or Turmeric for colour and flavour
