I have looked all over the internet for this recipe. My mom used to make it when I was younger and I'd like to make it for my family. Unfortunately, my mom lost the recipe. We remember it had hard-boiled eggs, celery, mayo, chicken, chow mein noodles, and cheese. We just can't remember what else was in it. Some recipes I've found have come close, but none of them have all of these ingredients and the majority of them are topped with potato chips, which this recipe definitely does NOT have. If anyone out there has this recipe (or maybe a relative who might have it), or knows of a website where I might be able to find this recipe (I've tried recipezaar, allrecipes, foodnetwork, cooks.com, and several others), I'd be really grateful!Does anyone have a recipe for Hot Chicken Salad Casserole?
*************HOT CHICKEN SALAD CASSEROLE
2 cans chicken breasts, cooked and chopped
2 c. celery, chopped
1 c. slivered almonds
2 cans creamy chicken mushroom soup
3/4 c. mayonnaise
4 tbsp. onion
1 tsp. salt
1/2 tsp. pepper
3 hard boiled eggs
1 lg. chow mein noodles
Shredded Cheese
Mix all except noodles. Place 1/2 noodles in bottom of casserole. Add ingredients; top with noodles and Cheese. Bake at 375 degrees for 30-40 minutes.Does anyone have a recipe for Hot Chicken Salad Casserole?
Hot Chicken Salad:
1 can cream of chicken soup
1 lrg. chicken, cooked and diced
3/4 cup mayonnaise
1/2 cup chopped celery
1 tbsp. grated onion
1 tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. pepper
3 hard boiled eggs, chopped
1 can water chestnuts, chopped
1/2 cup slivered almonds
1 cup crushed Ritz crackers (You could substitute these with the chow mein noodles and add in your cheese too.)
1 stick butter, melted
Mix together all ingredients except butter, almonds, and cracker crumbs and place in a buttered casserole dish. In separate bowl, mix together butter, almonds, and cracker crumbs and place on top of casserole. Bake at 375 degrees for 30 minutes. Can use as a dip and serve with crackers or toast points.
I know you said that you checked recipezaar, but did you see this one? It has all of the ingredients...except for the hardboiled eggs, and you could just throw those in. What do you think?
Chicken Salad Bake
2 cups cubed or coarsely shredded cooked chicken
1 cup chopped celery
1/2 cup chopped onions
1 (5 ounce) can water chestnuts, drained %26amp; sliced
1/2 cup cheddar cheese
1/2 mayonnaise
1 tablespoon lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
1 (5 ounce) can chow mein noodles
Combine all ingredients and put in a 1 1/2 quart casserole.
Bake 400 degree uncovered for about 20 minutes until heated through
HOT CHICKEN SALAD CASSEROLE
2 c. cubed, cooked chicken
1 c. sliced celery
2 tsp. finely chopped onion
1 (6 oz.) can water chestnuts, sliced
1/2 c. sliced almonds
1 tbsp. lemon juice
1/2 c. water
2 c. cooked rice
1 can cream of chicken soup
1/2 tsp. salt
1/4 tsp. pepper
3/4 c. mayonnaise
3 hard boiled eggs
2 c. crushed potato chips
In large bowl, combine chicken, celery, onion, water chestnuts, almonds, rice, chicken soup, salt, pepper and lemon juice. Mix mayonnaise with water and add to chicken mixture. Gently stir in sliced eggs. Turn mixture into lightly buttered baking dish. Top with crushed potato chips. Bake at 450 degrees for 15 minutes or until mixture is bubbly. Serves 8 people.
