Cajun Spicy Chicken Thighs
8 Chicken thighs (with skin %26amp; bones)
1/2 cup flour
1/2 cup corn meal
1 cup corn polenta or hominy grits
1 Tblsp Cajun seasoning (I like McCormicks)
1 Tblsp Curry powder
1 Tblsp Onion powder
1 Tblsp Garlic powder
1 Tblsp Seasoned salt (Lawrys)
1 Tblsp Red pepper flakes
1 Tblsp Sugar
1 tsp Cayenne pepper
Mix all dry ingredients in a gallon size ziplock bag. Add chicken and knead the dry ingredients into the chicken, flipping and turning the bag for complete coverage until it is all absorbed. This also works up the gluten in the flour to form a nice crispy crust.
Now for the most important part, it has to be cooked in a Jet Stream oven. If you don't know what that is or where to get one go to http://www.nesco.com/ for more information. If you don't have and are unwilling to procure, borrow or steal a Jet Stream oven then you can just throw this recipe away.
18 minutes (turning 2 or 3 times) at 400 on low fan speed will do very nicely.
You can try to BBQ, bake or broil but for some reason it's just not the same. A convection oven or deep frying may work.

I have three ways for you to cook chicken thighs. The baking time assumes they have bones. For boneless, only cook 40 minutes.
1. Mix equal parts breadcrumbs and parmesan cheese, add a little garlic powder and italian seasoning. Dip the thighs in melted butter, then the breading. Bake 1 hour at 325.
2. Dip the thighs in melted butter, then douse liberally with Frank's Red Hot sauce (for Buffalo thighs). Bake 1 hour at 325.
3. Put the thighs in baking dish, douse liberally with your favorite BBQ sauce (I like Sweet Baby Ray) and cover with foil, bake 1 hour at 325.
STUFFED CHICKEN THIGHS
8 broiler-fryer chicken thighs
2 tbsp. butter
3/4 tsp. salt, divided
1/4 tsp. pepper, divided
1 c. fresh mushrooms, sliced
1/2 c. finely chopped celery
1/3 c. finely chopped onion
1/2 tsp. poultry seasoning
1/8 tsp. oregano
4 c. soft bread crumbs
1/2 c. chicken broth
Preheat browning skillet 3 minutes. Add butter and microwave until melted, about 1 minute. Add 4 chicken thighs and brown about 10 minutes, turning after 5 minutes; set aside. Repeat with remaining 4 chicken thighs.
Sprinkle chicken with 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper. To drippings in browning tray, add mushrooms, celery and onion; stir and microwave on HIGH for 5 minutes, stirring again after 3 minutes. Drain vegetables and then add remaining 1/2 teaspoon pepper, poultry seasoning and oregano. Gently stir in bread crumbs and then broth.
Place mixture in bottom of 1 1/2 quart baking dish; arrange thighs over stuffing. Microwave on HIGH, uncovered for 10 minutes, turning dish after 5 minutes. Let stand 5 minutes.
One of the best ways to eat any chicken is to cook them on a george forman (or equivalent) grill. It cooks fast, so the meat cooks but the mositure is locked in. Sliced ontop of a ceaser salad, mmmm!
You could also try this:
In a crockpot (or saucepan if you don't have one), put your chicken thighs (de-skinned), some italian sausage (i prefer hot, but it doesn't matter), a can of diced tomatoes and a table-spoon of flour. Let it cook for about 6 hours, OMG it is sooo good! If you are making it in the pan, cook the meat before you add the diced tomatoes and flour. Oh, and adding in some parm cheese or grated cheddar makes it so yummy!
thighs are pretty much all i buy, poultry-wise. i like them better than drumsticks, because i like to remove the skin, which is much harder to get off the drumsticks. and of course being higher in fat they taste much better than breasts.
i'm not a chef or anything, so i usually make them on the grill w/ BBQ sauce or in the oven with seasonings/breadcrumbs. maybe 20-25 minutes on the grill, more like 45 mins in a 375 degree oven. i find they're very good both of these ways. hard to go wrong.
I pulverize Stove Top (be it food processor ot hammer) to coat it and bake or nuke. Another one is lemon pepper it. B.B.Q. is always good. Try www.kraftfoods.com.; always a good source for recipes.When I B.B.Q. sometimes I marinate in oil and cayenne pepper. With lemon pepper I marinate with oil and lemon juice. I do prefer the thighs because you get more meat for the dollar. That's all I buy.
