1 1/2 lbs boneless skinless chicken breasts, cubed
1/8 cup red wine vinegar
1/2 lime, juice of
1 teaspoon white sugar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 green onions, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
10 6-inch flour tortillas
1 tomato, diced
1/4 cup shredded lettuce
1/4 cup shredded monterey jack cheese
1/4 cup salsa
Saute chicken in a medium saucepan over medium high heat for about 20 minutes.
Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano.
Simmer for an extra 10 minutes.
Heat an iron skillet over medium heat.
Place a tortilla in the pan, warm, and turn over to heat the other side.
Repeat with remaining tortillas.
Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and salsa.Anyone have a good chicken tacos recipe?

INGREDIENTS
1 pound skinless, boneless chicken breast halves, cut into bite size pieces
1 cup lemonade
2 tablespoons olive oil
1 tablespoon lime juice
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 bay leaf
1 (12 ounce) package corn tortillas
1 head lettuce, shredded
2 large tomatoes, chopped
1 (8 ounce) package shredded sharp Cheddar cheese
1 (8 ounce) jar salsa
1 (8 ounce) container sour cream
DIRECTIONS
In a large skillet over medium heat, combine chicken, lemonade, olive oil, lime juice, and Worcestershire sauce. Season with garlic powder, onion powder, and bay leaf. Simmer until chicken is no longer pink, and juices run clear, 15 to 20 minutes.
Meanwhile, warm the tortillas in the oven or microwave until soft. When chicken is fully cooked, transfer to serving bowl. Place lettuce, tomatoes, cheese, salsa, and sour cream in serving dishes. Easy Chicken Soft Tacos:

10 (8 inch) flour tortillas
1 tablespoon vegetable oil
1 lb boneless skinless chicken, cut into 1 inch pieces
1 (1 1/4 ounce) package taco seasoning mix
2 tablespoons water, divided
1 (16 ounce) can refried beans
3/4 cup taco sauce
2 cups shredded monterey jack cheese
1. Preheat oven to 375 degrees; place tortillas on baking sheet.
2. Heat oil in large skillet; add chicken; cook until no longer pink; add 2 T seasoning mix and 1T water; mix well Combine refried beans, remaining seasoning mix and remaining water in small bowl.
3. Spread bean mixture evenly over each tortilla.
4. Layer each with a drizzle of taco sauce.
5. Top evenly with chicken mixture, cheese and desired toppings (chopped tomatoes, sliced green onions, etc.).
6. Bake for 5-10 minutes or until cheese melts; fold each in half.
JALAPENO CHICKEN TACO CASSEROLE
This is not for the faint of heart, it is Spicy and it is Delicious.
Step One:
6 jalapenos
1 onion
10 Chicken breasts
3 cloves garlic
1 tbsp Cumin
1 tbsp Chicken broth
Step Two:
1 can cr. Chicken soup
1 pkg frozen spinach
1 tsp salt
Step Three:
500 ml sour cream
Step four:
450 g bag tex mex cheese
350 g bag bite size tostitos
Turn oven on to 350
Fry Step one in oil, then add step two. Simmer for ten minutes then add step three.
Layer 1/2 sauce in a 9x13 pan; put a layer of chips and cheese. Then add another layer off chips and cheese.
Bake for 30 minutes

simple and easy!
in a skillet put some olive oil, add some onions and garlic, cook for like 5 minutes, add cooked chicken, chicken broth and 2 chipotles peppers and its sauce (buy the chipotle peppers can) let it cook for 10 minutes! and voila! make sure you have some sour cream in case it turns out too hot to handle!
