i just make chicken breast strips with lemonpeper and garlic on them, i make a lot at a time n freeze it. i use it with all sort of recipies my favorite is my homemade alfredo sauce, its so easy to make big batches if you want the recipie feel free to email, but i have never had a problem defrosting n heating up the chicken, you can never tell it was frozen. Good luck, my mom did the food for my wedding n did our alfredo n it was a huge hit, but i wish u a lot of luck, youll need it, n recruit as much help as possibleI am catering my daughters wedding(yes i am insane) and i need a recipe for chicken breasts that feezes well .

Bourbon Street Chicken
Ingredients
4 chicken breasts
1 tsp ground ginger
1/4 cup soy sauce
2 tablespoons dried minced onion
1/2 cup packed brown sugar
1/4 cup bourbon (to taste)
1/2 tsp. garlic powder
Directions
Preheat oven to 375 F. Place chicken breasts in a 9x13'; baking dish. Combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder and pour over chicken. Cover dish and place in refrigerator overnight. In a covered dish, bake in preheated oven, basting frequently, for 1 hour or until chicken is well browned and juices run clear. Also good on the grill!

I hate to say this but nothing is going to defrost that well. That is why catered meals with poultry often taste so bad. But it seems you have to do this. The chicken has to be in a sauce that is not based upon butter or cream. It will separate, thus tasting and looking nasty.
I would suggest some type of chicken casserole. Parm is pretty regular but you could dress it up with eggplant, artichokes, etc.
I don't have any help to offer unfortunately. I just wanted to wish you good luck.
Chicken Cacciatore
Chicken Breast ( cut up) one seven ounce chicken breast per two people.
Canned tomatoes (whole peeled or diced)
Tomato sauce
Fresh Red peppers large pieces
Garlic (minced in olive oil)
Yellow Onion ( roughly chopped)
Black olives (optional
Oregano
Parsley
Fry the chicken pieces in olive oil and butter
Add the peppers, onions and garlic
Turn the heat down and add the remaining ingredients.
Let simmer for an hour.
Cool to room Temp and freeze in zip lock bags
two days before the wedding let the bags thaw in the refrigerator.
Throw in the roaster approx. 2 to 3 hours before serving on low setting
You can serve this with a multitude of things.
But if i were you...I'd make lasagna.
You can make that in advance. It will hold in a refrigerator for 3 days.
Finish it off in the oven at 350 1 hour before serving.
