broth is from meat
stock is from bones... more gelatin and deeper taste
some tips ive read when using broth:
-buy low-sodium broth. then add salt to-taste

Not true . Exactly how does one make chicken stock w/m meat and not use bones in the processs ? It's not the bones that give it the body , but rather the cartilege on the end of the bones that contain elastin %26amp; collagen that turns to gelatin w/ time Report Abuse

Broth is animal based.

Absolutely. The only difference between the two is that stock has a deeper taste then the broth.
It will work Albeit, without the rich flavor and thickness of good home made stock.
