Chicken with Black Beans and Rice
This is a variation of a cuban dish. The balsamic vinegar gives it an exceptional flavor!
ingredients:
3 tablespoons olive oil
1 pinch crushed red pepper flakes
1 large onion
4-5 cloves garlic, chopped
4 boneless skinless chicken breasts, cut into strips
2 teaspoons oregano, separated
2 teaspoons ground cumin, separated
2 (16 ounce) cans black beans, undrained
1 (4 ounce) jar sliced pimientos
salt %26amp; pepper
3 tablespoons balsamic vinegar
3 cups chicken broth
1 1/2 cups white rice
directions:
In a large pan, heat olive oil and add red pepper flakes.
Add onion and garlic, and cook until onion is tender.
Increase heat, add chicken, stirring until cooked.
Lower heat to medium, add 1 tsp oregano, 1 tsp cumin, and simmer 1 minute.
Add black beans, pimentos, remaining spices, and balsamic vinegar.
Blend and simmer uncovered for 30 minutes, reseasoning if needed.
While beans are simmering, bring broth to boil in a pan, add rice.
Lower heat to simmer, cover, and cook 20 minutes until rice is fluffy.

1 young chicken
2 tsp. black bean
4 garlic cloves
2 slices ginger
1 tsp. soy sauce
1/2 tsp. cooking wine
1/2 tsp. sesame oil
1 tsp. sugar
1 tsp. corn powder
1/4 tsp. salt
1 scallion
1. Chop young chicken into 1 inch pieces. Mix the chicken with sesame oil, wine, soy sauce, sugar, corn powder and salt all together for at least 1/2 hour.
2. Wash and dry the black bean and then grind them.
3. Chop the garlic, ginger and scallion into tiny pieces. Fry them with oil and then mix with the chicken well.

my brother spent plenty of nights slaving away at the Texas Roadhouse... they grill chicken breast with butter, add moneray jack cheese, and top with black beans, sour cream and chives. its called southwest chicken at the restaurant.
