2 boneless skinless chicken breast, cut in half and butterflied (sliced through the middle-but not all the way through, to make a pocket)
1 1/2 cups steamed broccoli
1 cup stuffing mix
2 tablespoons butter
2 tablespoons flour
1 cup milk
1/2 cup shredded cheddar cheese (or cubed Velveeta for a smoother sauce)
2 tablespoons cream cheese
1/2 cup shredded cheddar cheese (not a typo, another 1/2 cup)
salt and pepper
garlic powder
Make cheese sauce: Melt butter in a small sauce pan, and then add flour and stir well.
Add milk gradually, whisking constantly to avoid lumps.
Add salt, pepper , stuffing mix and garlic powder, and stir constantly until thickened.
Add 1/2 cup cheddar and the cream cheese, and stir to melt.
Add 1/4 cup of the broccoli pieces, and stir to combine.
Make chicken: Open butterflied chicken pieces.
Sprinkle with salt, pepper and garlic powder.
Place a bit of steamed broccoli and a bit of cheese in each.
Fold over, and seal with toothpicks.
Heat about 1-2 tablespoons olive oil over medium heat, and brown chicken on all sides, until cooked thoroughly.
Place chicken in a small casserole dish, and pour cheese sauce over.

4 skinless, boneless chicken breast halves
1 pound broccoli florets, cooked
1 (10.75 ounce) can condensed cream of mushroom soup
1 tablespoon mayonnaise
1 cup shredded Cheddar cheese
1 cup dry stuffing mix
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Boil chicken until tender and shred or cut into bite size pieces. Meanwhile, steam broccoli until crisp but tender.
In a small bowl mix together the soup and mayonnaise. Set aside. In a 9x13 inch baking dish layer the chicken, broccoli, soup mixture, and cheese. Sprinkle dry stuffing mix over the top and bake in the preheated oven for 25-30 minutes.
Cut up the chicken and saute in butter or oil until browned on all sides, add broccoli cut into bite sized pieces and enough water to steam the chicken and broccoli until almost done (you might want to cover it). Remove the chicken and vegetable to plate. Make the stove top in the same pan according to package directions. Stir in the chicken, broccoli and as much cheese as you want.
heat up a skillet and put some olive oil and fresh garlic. Add the chicken and salt and pepper. Let the chicken cook for awhile and then add the broccoli and stove top stuffing. Once that is all cooked add the cheese on top while everything is in the skillet and let it melt. Hope this helps. :)
