I make a simple compound butter- and slather it under chicken skin- using lemon juice, rosemary, thyme, and pepper- I then shove a cut up whole lemon in the chickens butt with a couple sprigs of thyme and rosemary- I coat the outside of the bird with olive oil and salt and pepper-

Beer Can Chicken
Roasting Chicken
1 can Dark Beer (make sure the can fits up the chicken)
Any spices you like
Olive Oil
In a small bowl mix all the spices you like (you need at least 1/2 cup)
Rub olive oil all over the bird including under the skin and in the crevace
Rub the spices all over the bird, under the skin, in the crevace.
Pour out 1/4 of the beer, add the rest of your spice mixture in the beer can. Prop the bird on the can and place in a roasting pan.
Cook on 400 for 1/2 hour uncovered. After 1/2 hour wrap alum foil around the bird and cook until done. Use a thermometer. Bird should be 170 degrees.
Sides: Potatoes O'Brien - cubed potatoes, onion, green pepper.
Broccoli golden mushroom soup, french fried onion - bake for 20 mins covered.
I stuff the chicken with a lemon (slice the peel several times to let the juice flow). The outside I rub with oil and a stock cube.
Baste the chicken several times when cooking. Make sure you let it rest before carving.
I serve it with a proper gravy made with the juices, carrots and peas, stuffing balls (sage and onion) and home made roast potatoes.
This is the super silliest easiest thing and outrageously good. put a pinch of tyme and cut an orange in half and put it inside the chicken before baking (peel and all), this will be the greatest gravy you have ever had! i tried it with lemon one time but it made the gravy abit bitter. the orange makes the chicken taste sweet and the gravy is just smashing. trust me you wont ever roast a chicken any other way again.

Take the chicken and wash/rinse out with water
Place in microvable dish and pour Soy Sauce over and in it
I put aluminum foil on the tips of the legs and wings (its o.k. to do this). Depending on the size of the chicken I put it on for 30-35 mins
baste every now and then with the soy sauce in the dish.

I do it very simply. I mix poultry seasoning and garlic with butter and stuff it under the skin and put a dollop inside the cavity. I serve mashed potato's and gravy and usually broccoli and/or squash and dinner rolls
