I ate at the Cheesecake Factory last night and had the Spicy Chicken Chipotle Pasta...it was awesome. I was just wondering if anybody had either a copycat recipe or the real thing?Recipe for Spicy Chicken Chipotle Pasta?
Armadillo Border Grill Chipotle Chicken Penne Pasta Recipe
Serves/Makes: 2
Ingredients:
8 ounces cooked penne pasta
2 large marinated chicken breasts
2 tablespoons diced green chiles
2 ounces sliced onion
2 ounces sliced mushrooms
1 ounce cotija cheese
4 cilantro sprigs
Marinade
1/4 cup soy sauce
3/4 cup soybean salad oil
1/2 teaspoon garlic powder
1/2 teaspoon celery salt
1/2 teaspoon white pepper
1 teaspoon cayenne pepper
1/2 teaspoon dry mustard
1 tablespoon Japanese chiles
Chipotle Cream Sauce
12 ounces heavy cream
2 1/4 ounces chipotle in adobo sauce.
Directions:
The night before: Chop chicken into 1/2 inch pieces and marinate overnight.
To Prepare: Prepare Chipotle Cream Sauce and set aside.
In a hot saute pan with a little melted butter, add the chicken and onions. Cook until half done. Ad mushrooms and Chipotle Cream Sauce. Bring to a simmer and let cook for another minute. Add the pasta; toss until well mixed. Pour into a warm pasta bowl. Garnish with crumbled cotija cheese and cilantro sprigs.
Marinade: Mix all together and let the chicken marinate overnight. Dice the chicken after marinating.
Chipotle Cream Sauce: In a blender, puree the chiles. Mix in heavy cream until well blended. Add to the pasta in the pan after chicken and vegetables have finished cooking.

CHICKEN CHIPOTLE PASTA

Servings: 8
1 tbsp. olive oil
4 oz. green peppers, sliced
4 oz. red peppers, sliced
12 oz. cooked fajita-style chicken thigh strips
2 cups prepared alfredo sauce
1/2 oz. chipotle paste
1 1/2 lb. cooked bowtie pasta
2 oz. grated parmesan cheese
Heat oil in large saute pan. Add green and red peppers; cook until tender.
Add chicken to peppers and heat through.
Add Alfredo sauce and chipotle paste to chicken-pepper mixture; stir to combine and heat 2 to 3 minutes until 165 degrees F.
Combine pasta with sauce; stir to coat. Heat 2 to 3 minutes or until 165 degrees F.
Portion between 8 plates. Garnish each with 1/4 oz. Parmesan cheese. Serve immediately.
Spicy Chipotle, Honey, Mustard, Grilled Chicken:
Ingredients:
1/2 cup Hellmann's mayonnaise
1 chipotle chile in adobo, chopped fine
1 tablespoon honey dijon mustard
1 tablespoon honey
1 teaspoon lime juice
1/8 teaspoon ground black pepper
1 pinch garlic salt
2 scallions, white and green chopped
4 boneless skinless chicken breast halves (about 1-1/2 lbs.)
Garnish:
1/4 cup diced red peppers
2 tablespoons chopped fresh cilantro or fresh parsley
Directions:
1.In medium bowl, combine all ingredients except chicken and garnishes. Reserve 1/3 cup mayonnaise mixture.
2.Grill or broil chicken, brushing frequently with remaining mayonnaise mixture, until chicken is thoroughly cooked, turning once.
3.Serve chicken with reserved mayonnaise mixture and garnish with diced red peppers and cilantro.
