Why not cook up a basic pasta sauce, marinara or alfedo, and add the chicken in at the last second, just long enough so that it heats it up and absorbs some of the flavor of the sauce
Chicken soup - very tasty and great for colds and flu etc. Bring a large pan of water to the boil - then put in the entire chicken carcass and boil for about 1/2 hour. When chicken meat falls off bone - remove chicken bones and bits you don't like the look of and then add seasoning and any veg such as leeks, onions and potatoes for consistency. - and chicken stock or granules. Salt and plenty of pepper to taste. You can cook for a little while longer and then serve as you want it with some nice crusty bread.
try the dustbin
if u pour tomato sauce on it... put some cheese... and put it in a sandwich = chicken parm sandwich

Tarragon chicken and grape salad tastes great and is easy - mix half a cup of creme fraiche and half a cup of mayonnaise together. Chuck in a handful of chopped tarragon, two chopped spring onions and a handful of halved white seedless grapes. Mix it all together then add the sliced cooked chicken. This is very nice on a baked potato. Bon Appetit!
Chicken stew...boil loads of chopped up vegetables..potatoes, carrots, onions, leeks, swede, until soft..add chicken stock, boil down..then at the last minute add the chicken..not too soon or it will go all stringy....always works for me!!f
Make Faiitas out of it. Get some salsa or sour cream and put on a wrap, add some panfried peppers, onions etc and then add the chicken Yummy!
