Soup Recipes With Chicken... Any Ideas?

Okay, I posted this in the food section but decided I probably should have posted it to have other mommy's answer... So here it is...





Alright, last night we had a whole chicken for dinner, there a quite a bit of left overs and I was thinking of making some kind of soup from it for tonight. There isn't much in the house and I can't go to the store. We have the chicken, some frozen mixed veggies, chicken broth, and some wheat angel hair pasta and few other random things in the cupboard. I'd love to maybe make some homemade noodles but have no clue how. Not even sure to begin with just the chicken... If anyone has ideas other then soup I am open to them.... Oh, and it needs to be somewhat healthy, my MIL counts her calories, so I try to cook things we can all eat. Thanks =)Soup Recipes With Chicken... Any Ideas?
Chicken noodle soup





Boil the chicken in some of the broth and water, even though it's already cooked the skin and such will give it flavor.


Take the chicken out and reserve broth.


skin chicken and discard the skin. Shred chicken off the bown and add to broth. Now add your noodles and whatever veggies you want ( I use celery, onion, and carrots) boil til noodles and veggies are done. I also add salt, pepper, and garlic powder or fresh garlic, but that's up to you.





Other soups,


throw some corn, chicken, broth, milk, onion, salt and pepper into a pot and make chicken and corn chowder.





Brocolli, cheese, chicken, broth, milk, seasonings to make cheesy brocolli chicken soup





Or the best with left over chicken..chicken and dumplings. Either make your own dumplings ( a biscuit recipe, drop the dough into the chicken and broth/water) or use frozen or canned biscuits peeled into little balls.Soup Recipes With Chicken... Any Ideas?
throw everything in a pot and bring it to a boil then simmer it on low for a long time (a few hours). you could get some cream of chicken or cream of celery soup as well and make a casserole...just put everything in a casserole dish (except for the broth) with some egg noodles and bake it at 350 degrees until it's bubbling.
If your chicken is cooked you can put some carrots, potatoes, salary, onion, cilantro and maybe a lil salt then add chicken broth to cover the veggies let it cook till the carrots and potatoes are soft then shred your chicken into the soup and let simmer for about 15 min.
My friend made the olive garden reciepe for ';chicken gnocci'; soup last night and ohhhhhh man it was GOOD!! You might have to buy a thing or two but here's the reciepe.. Hope you like // try it!! :)

oh whoops just now saw you cant go to the store.. maybe another time then?? its absolutely delicious!
Skip the angel hair,it's too starchy for a soup. I'd use Egg noodles if anything. You can toss in some carrots,celery,chicken broth,and the chicken,and let it simmer for a while.
1 can Campbell's Chicken Noodle Soup


1 boneless chicken breast: cooked

For chicken soup I toss the whole chicken in a large pot, juice and all, cover with water - cook for one day or overnight with a whole onion cut into 8ths or 16ths, cool overnight in the fridge.





Next day, skim most of the fat that solidified in the fridge, strain juice into a pot, pick the chicken bones and put the meat back into the juice pot, put on medium heat. Add rosemary, peppercorns, a bay leaf and rice or corn. You can add any vegetable you wish and noodles later in the day, salt to taste. It's very simple and low fat when you skim the fat, if it tastes blah add a little olive oil to it (a healthy fat), it brings the flavor out without the chicken fat. Serve straight or with cheese sandwiches.
