Does anyone have a good and easy recipe to make with Chicken Legs?

SPICY CHICKEN LEGS





2 tbsp. vegetable oil


2 cloves garlic, minced


2 onions, chopped


1 c. chili sauce


1/3 c. brown sugar


1 tbsp. Worcestershire sauce


1 tsp. celery seeds


1/2 tsp. salt


6 to 12 chicken legs





Heat oil in pan. Cook garlic and onion for 3 minutes. Add chili sauce, brown sugar, Worcestershire sauce, celery seeds and salt to pan, and bring to a boil. Cook slowly for 10 minutes. Place the chicken legs in a large oven dish, side by side in a single layer. Pour sauce over the chicken legs and cook in a 350 degree oven, uncovered, for 1 hour. Turn a couple of times while baking.





OR





SWEET AND SOUR CHICKEN LEGS





8 1/4 oz. pineapple chunks (save juice)


2 tbsp. cornstarch


3/4 c. sugar


1/2 c. soy sauce


1/4 c. pineapple juice


1 clove garlic, minced


1/2 tsp. ground ginger


1/2 tsp. pepper


1/4 c. vinegar


Chicken legs





Mix everything together, except chicken legs. Pour mixture over chicken legs. Bake at 350 degrees until done





OR





BAKED STUFFED CHICKEN LEGS





1/2 lb. mushrooms, coarsely chopped


1 sm. onion, coarsely chopped


1/2 green pepper, coarsely chopped


1 c. plus 1 tbsp. butter


1/2 tsp. Worcestershire sauce


Pinch of salt


Pinch of pepper


Pinch of sage


2 c. cooked wild rice


6 chicken legs with thighs attached


Juice of 1 lime


1 tbsp. paprika





Saute mushrooms, onion and green pepper in 1 tablespoonful butter until tender. Add Worcestershire sauce and seasonings. Stir in rice. Stuff chicken legs tightly between meat and skin with rice mixture. Arrange in shallow baking pan. Combine remaining melted butter with lime juice and paprika; brush chicken with mixture. Bake at 350 degrees for 1 hour or until golden brown, basting frequently. Yields 6 servings

Golden Phoenix Claws


1 pound chicken feet


2 quarts oil


2 quarts water


1 ounce fresh ginger


3 pieces star anise


2 ounces Chinese parsley roots


2 ounces maltose sugar (see note)





Marinade:


2 tablespoons oyster sauce


1 tablespoon sugar


2 tablespoons soy sauce


1 tablespoon sake


1 ounce chopped chile pepper


2 cloves garlic, minced


1/2 teaspoon white pepper


1 tablespoon black bean sauce


1/2 teaspoon sesame seed oil





Wash feet, chop off toenails and cut into quarters.





Heat oil to 350 degrees. Mix chicken feet with maltose and fry until golden brown, about 7 minutes. Remove and drain.





Boil water and add ginger, star anise and parsley roots. Add feet. Bring to boil again, then reduce heat and simmer 90 minutes. Drain.





Combine marinade ingredients. Marinate feet 24 hours. Before serving, steam feet and marinade 15 minutes. Serves 3.





Note: Maltose is a syrup used for cooking and brewing beer. Oahu Homebrew Supply sells it for $2.25 a pound.

If you just want a basic recipe -- coat the chicken legs with bread crumbs or a mashed potato flake mix( (Betty Crocker Potato Buds) and broil in the oven until brown %26amp; crispy--maybe 45 minutes or so. I suppose you could bake them instead of broiling, but I usually broil mine and they are easy and tasty.
