Anyone know of a good yet easy recipe for Spicy/cajun chicken?

I'm looking for an easy but good cajun/spicy chicken breast recipe, perferably oven fried or pan fried, anyone know of one?Anyone know of a good yet easy recipe for Spicy/cajun chicken?
4 pounds of chicken.


1 16oz bottle of ranch sauce


Chili powder


Large tortilla's


--


Optional


Lettuce


Diced tomato


shredded cheese





DIRECTIONS


1) Cut up chicken into small cubes and cook them in a pan.





2)While the chicken is cooking, mix the ranch sauce with chili powder, adding powder until you think it is spicy enough.





3) When chicken is done, drain it, and put it into a large bowl, mix in the Chili-ranch sauce..





4) Spoon a portion over Tortilla and add lettuce, tomato, or cheese as desired.Anyone know of a good yet easy recipe for Spicy/cajun chicken?
Season clean and dried chicken breasts and season with cajun spices (and salt if it isn't in your spice mix).


Let the chicken rest at room temp. for about 20 minutes.


Heat up a heavy sautee pan.


When hot add enough canola oil to just coat the pan.


When oil is hot and is beginning to ripple, carefully put chicken in pan-smooth side of chicken down.


When cooked almost all the way through, turn chicken over.


Add enough chicken stock to the pan to cover half of the chicken. Be careful it will steam when you add it...this is good, it will get the fonde off of the pan.


Use a wooden spatula to scrape up the fonde-brown bits on pan.


Bring stock and chicken to a full boil


Check the seasonings off the stock and adjust to your liking, you could also add some sauteed vegetables to the stock before you bring to a boil-celery, onion, sweet bell pepper (trinity) classic Louisiana combo.


You could make some spicy rice to go with the chicken and sauce too.


Bring stock (and veggies) to simmer and reduce until you are happy with the flavor.

INGREDIENTS


4 Chicken Breasts


Cajun Spice


500g Rocket


300g Green Beans


录 small Pumpkin (Japanese)


1 Avocado (Hass)


1 bunch Coriander


1 Lemon


1 Lime


Method


Slice pumpkin into medium size wedges and coat with oil and seasoning (salt and pepper).


Roast at 180 for about 25 minutes or until soft.


Coat chicken breast in Cajun spice mix and squeeze lemon over each.


Pan fry on hot on both sides until both sides are sealed (coloured). Then put in moderate (180) oven for about 10 鈥?15 minutes.


Blanche beans in boiling water (about 1 minute) and refresh under cold water to stop cooking process.


Assemble the beans pumpkin and rocket on plate. Place chicken breast on top and cut the Avacado into small chunks and place on top.


Garnish liberally with fresh coriander and lemon and lime juice.
